Athletes always look for easy, yummy treats. Not too calorie dense, still somewhat nutritious but also a “real” treat. Here’s one that is pretty easy to do, fits into the daily nutrition plan and leaves room for many extras, variations and experiments. Enjoy it for breakfast, as a mid-afternoon snack or for dessert !
Topfen (curd, quark) is a good high quality, milk-based protein source. In Austria it’s used for many warm and cold meals. It’s an ingredient of many traditional recipes, especially sweet treats (Mehlspeisen). The nice thing about it is that there is a low-fat and fat-free version, so for people who need to limit their calories, it’s easy to reduce energy content by choosing the fat-free version.
Curd Pankcake (Topfennudeln)
Ingredients
4 servings
250 g curd
2 big eggs
1 tsp salt
Zest of ½ organic lemon
½ cup flour
Cranberry jam
Directions
Mix all ingredients and knead well to get a smooth dough.
Form small patties and cook in a pan in a little bit of oil/butter till golden.
Serve with cranberry jam.
Hint: Add vanilla extract, poppy seeds, nutmeg or cinnamon to the dough.
